COURSES AND SKILLS PROGRAMMES
The
school offers one-year certificates, two-year diplomas, three-year
advanced diplomas and skills programmes (short courses).
Our courses have been developed for the hospitality, tourism and
leisure industries. All our courses and skills programmes are theta
registered.
1. Diploma in Professional Cookery (FPDO5)
Qualification Type:
Further Education Diploma in Hospitality - level 5
Purpose:
This qualification has been developed for professionals in the food
preparation industry. It brings together elements of food and drink
preparation and service as well as management. This diploma has been
designed for those learners who wish to work their way up to executive
chef level. This qualification will professionalize the industry
and is applicable to all sectors, from small restaurants to large-scale
hotels. The qualification builds on other certificates and provides
articulation with Gaming, Travel and other Tourism industries.

Core:
All unit standards in the core section are compulsory. A total of
181 credits.
Fundamental:
Certain unit standards with a combined weighting of 44 credits have
been specified as compulsory. (Even though SAQA does not specify
a required amount of fundamental units for level 5 qualifications.)
Elective:
Unit standards with a total weighting of 147 credits have been developed
here. The learner is required to select unit standards from each
level as outlined in the rules of combination (further down). A minimum
of 20 credits must be selected from the electives available.
Learning assumed to be in place:
It is assumed that a GEC certificate or equivalent has been obtained
by the candidate at level 4. (The existing matric certificate or
the Certificate in Professional Cookery Level 4 meets these requirements.)
2. Diploma in Accommodation Services (ASDO5)
Qualification Type:
Higher Education Diploma in Hospitality - level 5
Purpose:
This qualification has been developed for professionals in the accommodation
industry, It brings together elements of housekeeping, front office
and management. This qualification will professionalize the industry
and is applicable to all sectors, from small bed and breakfasts to
large-scale hotels. The qualification builds on the accommodation
services certificate and provides articulation with Gaming, Travel
and other Tourism industries.

Core:
All unit standards in the core section are compulsory. A total of
161 credits.
Fundamental:
Certain unit standards with a combined weighting of 40 credits have
been specified as compulsory. (Even though SAQA does not specify
a required amount of fundamental units for level 5 qualifications.)
Elective:
Unit standards with a total weighting of 134 credits have been developed
here. The learner is required to select unit standards from each
level as outlined in the rules of combination (further down). A minimum
of 40 credits must be selected from the electives available.
Learning assumed to be in place:
It is assumed that a GEC certificate or equivalent has been obtained
by the candidate at level 4. (The existing matric certificate meets
these requirements.)
3. Certificate in Food and Beverage Services (FSCO4)
Qualification Type:
Further Education Certificate in Hospitality - level 4
Purpose:
This qualification has been developed for people in the food and
beverage service industry. It brings together elements of food and
drink preparation and service as well as supervision. This qualification
is applicable to all sectors, from small restaurants to large-scale
hotels. The qualification leads toward the F&B Management diploma
and provides articulation with Gaming, Travel and other Tourism industries.

All unit standards in the core section are compulsory. A total of
93 credits.
Fundamental:
Certain unit standards with a combined weighting of 48 credits have
been specified as compulsory. (SAQA specifies 36 credits from Fundamental
Unit Standards for certificates at levels 1-4. The 6 missing credits
may be decided on by SAQA or left up to the discretion of the learner).
Elective:
Unit standards with a total weighting of 40 credits have been developed
here. The learner is required to select unit standards totaling a
minimum of 15 credits from this list.
Learning assumed to be in place:
It is assumed that a FETC certificate or equivalent has been obtained
by the candidate at level 4. (The existing matric certificate meets
these requirements.)
4. Certificate in Hospitality Reception (FHCO4)
Qualification Type
Further Education Certificate in Hospitality - level 4
Purpose:
This qualification has been developed for the reception function
within the accommodation industry. It brings together all aspects
of front office and supervision. This qualification will professionalize
the industry and is applicable to all sectors, from small bed and
breakfasts to large-scale hotels. The qualification leads to the
accommodation services diploma and provides articulation with Gaming,
Travel and other Tourism industries.

weighting of 64 credits have been specified as compulsory. (SAQA

Unit standards with a total weighting of 25 credits have been developed
here. The learner is required to select unit standards totaling a
minimum of 6 credits from this list.
Learning assumed to be in place:
It is assumed that an FETC certificate or equivalent has been obtained
by the candidate at level 4. (The matric certificate meets these
requirements.)
5. National Diploma in Event Co-ordination

Credits:

Purpose:
This qualification will enable creative co-ordination of professional,
feasible, innovative and exciting events. A qualifying learner will
be able to demonstrate knowledge of the event industry and put that
knowledge into practice in coordinating quality events to a level
of professionalism expected by a national industry. The learner will
contribute positively towards supporting the event industry as a
part of Southern Africa’s tourism sector.
A learner who has achieved
this qualification will be capable of combining a range of self-organization
and life-long learning skills with a working knowledge of South African
tourism issues, and integrating these within a context to produce
a professional practice which adheres to the high quality standards
expected by the industry. In addition they will be positioned to
further their learning, practice and career within the events industry
- either at further levels or in other areas of practice. Expansion
into other sub-sectors of tourism is also possible.
Learning assumed to be in place:
It is assumed that learners wishing to enter a programme leading
to this qualification have literacy, numeracy and communication equivalent
to NQF Level 4. The existing matric certificate is applicable.
6. Certificate in Accommodation Services (ASCO2)
Qualification Type:
Further Education Certificate in Hospitality - level 2
Purpose:
This qualification has been developed for the accommodation industry.
It brings together all aspects of housekeeping and basic supervision.
This qualification will professionalize the industry and is applicable
to all sectors, from small bed and breakfasts to large-scale hotels.
The qualification leads to the accommodation services diploma and
provides articulation with Gaming, Travel and other Tourism industries.

select unit standards totaling a minimum of 34 credits from this
list.

It is assumed that a GEC certificate or equivalent has been obtained
by the candidate at level 1.
7. Certificate in Professional Cookery

Purpose:
This qualification has been developed for professionals
in the food preparation industry. It brings together elements of
food and drink preparation as well as supervision. This qualification

Elective:
Unit standards with a total weighting
of 75 credits have been developed here. The learner is required to
select unit standards form each level as outlined in the rules of
combination (further down). A minimum of 10 credits must be selected
from the electives available.
Learning assumed to be in place:
It is assumed that an FEC certificate or equivalent has been obtained
by the candidate at level 2. (The existing Std 8 certificate meets
these requirements.)
8. Diploma in Hospitality Management
(offered in collaboration with Centurion Academy)
Duration:
Two years full time, minimum 100 hours workplace training on site.
Entry:
Grade 12 (Matric certificate) or certificate in level 4 (subject
to selection criteria).
Careers:
Assistant Hotel Manager, Restaurant Manager, Assistant Operations
Manager, Guesthouse Manager.
9. Advanced Diploma in Hospitality Management
(offered in collaboration with Centurion Academy)
Duration:
Three years full time, minimum 200 hours workplace training
on site and industry placement for 6 months.
Entry:
Grade 12 (Matric certificate) or certificate in level 4 (subject
to selection criteria).
Careers:
Hotel Manager, Restaurant Manager,
Operations Manager.
10. Diploma in Food and Beverage Services
Purpose:
This qualification has been developed for professionals in the food
and beverage service industry. It brings together elements of food
and drink preparation and service as well as management. This qualification
will professionalize the industry and is applicable to all sectors,
from small restaurants to large-scale hotels. The qualification builds
on other certificates and provides articulation with Gaming, Travel
and other Tourism industries.
